About

A clean American ale dry yeast and one of the most reliable, forgiving and widely available strains in homebrewing. It ferments with low ester production and good attenuation, leaving a neutral background that lets hops and malt do the talking. Its wide temperature tolerance and ease of use make it the standard choice for a huge range of American and modern styles.

Brewing tips

  • Lag is typically 12–24 hours; an overnight start is normal.
  • Minimal ester increase across its range, so it stays clean even at the warmer end.
  • Low pressure tolerance — not suited to pressure fermentation above 1–2 PSI.
  • Ferment cool (15–16°C) for a clean, lager-adjacent American profile.

Handling & storage

Rehydration
Rehydrate in water 15 min at 20–25°C, or direct-pitch (≈85% viability direct).
Storage
2–8°C ideal; room temperature acceptable short-term (1–2 months).
Shelf life
1–2 years if kept cool; check the date code. Viability drops ~10% per 6 months at room temp.
