Good malt character for an APA — noticeable caramalt sweetness that worked well with the hop blend. Clean citrus and resin from the Yakima-style combo. One of the more complete early beers.

About This Beer

Liberty Yakima Monster is a Liberty Brewing-inspired American Pale Ale, brewed in collaboration with Axel. The recipe uses a classic Yakima-heritage hop pairing — Amarillo and Simcoe — across boil, whirlpool, and dry hop, with Pacific Jade as the bittering base. It was the third batch on the home system and the first collaborative brew.

The name nods to both the source inspiration and the generous hop rates across three addition stages.

Ingredients

The grain bill is simple: Gladfield American Ale Malt as a clean, hop-forward base with Caramalt adding a touch of sweetness and body. The caramalt sweetness came through noticeably in the finished beer and worked well alongside the hop character.

Amarillo and Simcoe are one of the classic Yakima-region pairings. Amarillo brings citrus, apricot, and orange blossom; Simcoe brings pine, resin, and dank tropical fruit. Used together through late boil, whirlpool, and dry hop, they build a layered and complementary hop profile. Pacific Jade provided efficient, clean bittering at 75 minutes.

Brew Day

Brewed on the BrewZilla 35L Gen 4. Mash in at 67°C with 16.33 L, resting around 66.7°C for 60 minutes, then sparge with 16 L at 75°C. Pre-boil volume was 27 L, post-boil 26 L. A 2 L top-up was used during the boil. Whirlpool held for 10 minutes before chilling. Volume into the fermenter came in exactly on target at 24 L with OG 1.061.

Fermentation

Standard US-05 fermentation. A trub dump was performed prior to packaging, which reduced muck carryover and improved the clarity of the packaged product — noted as a useful practice to carry forward.

A final gravity was not recorded for this batch.

The Result

Bottled on 2023-01-17, targeting 2.3 vol CO2. Tasted on the same day.

One of the more complete early beers. The hop character was clear and well-integrated, with citrus and resin from the Amarillo and Simcoe combination coming through cleanly. The caramalt sweetness provided a malt backbone that held up against the hop load.

The collaborative brew and packaging setup worked smoothly.
