About This Beer
Third captured iteration on Owen’s Panhead Supercharger clone — sitting after the August 2021 American APA and the November 2021 Panhead clone. The notebook flags multiple deliberate changes against batch 18, making this the most heavily-iterated brew in the Panhead family. Notebook batch 22, brewed 24 February 2022 — two weeks after the Red IPA Gen 5 (batch 21).
What Changed vs Batch 18
The recipe sheet explicitly calls back to the November 2021 brew in two places (“previously 0.3 kg” and “previously 0.15 kg” for the crystals), and the yeast line notes “was 1 pkt”. Six deliberate changes:
- Malt brand and quantities — Briess Caramel 20L/40L → Gladfield Light/Medium Crystal, and quantities increased (0.3 → 0.6 kg light, 0.15 → 0.4 kg medium)
- Hop varieties — Simcoe/Centennial/Cascade → Pacific Jade/Mosaic/Cascade (same 100 g each, same structural schedule)
- Late boil → whirlpool — batch 18’s 1-min flameout charges all moved to a 20-min whirlpool stand
- Pitch rate doubled — 1 packet → 2 packets US-05
- Sparge pH adjustment — first explicit pH adjustment in this recipe line (5.5 with 88% lactic acid)
- Priming sugar reduced — 150 g → 100 g
Grain Bill
5.8 kg total, all Gladfield this time:
- 4.8 kg Gladfield Ale Malt (base, labelled “Pale Malt” in the notebook)
- 0.6 kg Gladfield Light Crystal (doubled from batch 18 — Briess Caramel 20L → Gladfield)
- 0.4 kg Gladfield Medium Crystal (almost tripled — Briess Caramel 40L → Gladfield)
The crystal increase pushes colour toward “medium dark amber” per the tasting note — visibly deeper than batch 18.
Hop Schedule — 300 g Across Three Varieties
Same structural pattern as batch 18, with Pacific Jade and Mosaic replacing Simcoe and Centennial.
Pacific Jade — 100 g: 10 g at 60 min, 20 g at 10 min, 20 g whirlpool (20 min), 50 g dry hop on day 5
Mosaic — 100 g: 10 g at 30 min, 20 g at 10 min, 30 g whirlpool (20 min), 40 g dry hop on day 5
Cascade — 100 g: 30 g whirlpool (20 min), 70 g dry hop on day 5
The 20-minute whirlpool replaces the 1-minute flameout charges from batch 18 — same hop weights, different extraction approach.
Fermentation
2 packets of Safale US-05 pitched at 19.5 °C — explicit pitch rate increase (“was 1 pkt”). The plan:
- Primary at 19.5 °C for 5 days
- Dry hop on day 5
- Continue at 19.5 °C for 5 more days
- Cold-condition at 13 °C when airlock activity slows
- Cold crash held for 11 days — much longer than typical
Dry hop on day 5: 50 g Pacific Jade + 40 g Mosaic + 70 g Cascade = 160 g total.
US-05 attenuated hard with the double pitch — FG hit 1.008 against a 1.013 target (84.0 % attenuation). ABV finished at 5.51 % vs 5.2 % target, within style.
Water treatment: 1 tsp calcium sulphate, ½ tsp calcium chloride. No magnesium sulphate this batch — different from batches 14/18. Sparge water pH adjusted to 5.5 with ½ tsp 88% lactic acid — first explicit pH adjustment in this recipe line.
Packaging
100 g of white sugar in 250 mL water for bottle conditioning. At 21 L bottled, this is ~4.8 g/L — low end of the bottle-conditioning range, down from 150 g (~6.8 g/L) in earlier batches.

Tasting
- Good bittering, good mouthfeel
- Woody aftertaste
- Medium dark amber colour
- Not as fizzy as Owen would have liked
Two carry-forward notes:
- Under-carbonation lines up with the reduced priming sugar (100 g, ~4.8 g/L) combined with the 11-day cold crash dropping enough yeast that bottle conditioning ran slowly. Future iterations should scale priming sugar back to ~130–150 g for this recipe.
- Woody aftertaste may be related to the heavy Mosaic whirlpool + dry hop combination — Mosaic can lean dank/woody at high rates on a malty base.
