About

Named for the goddess of fruit trees and developed by Escarpment Laboratories (Canada) using advanced breeding and adaptive laboratory evolution in high-ABV, highly hopped IPA fermentations. A top-fermenting Saccharomyces cerevisiae that gives a fruity, juicy profile (peach, citrus, tropical fruit), enhances biotransformation and haze, and ferments fast and vigorously. Its 14% alcohol tolerance makes it flexible from session IPA up to big, hop-forward beers.

Brewing tips

  • Strongly biotransformation-active — add hops during active fermentation for maximum tropical conversion.
  • Ferments fast and vigorous (4–5 days); leave headspace and manage krausen.
  • Supports haze in modern IPA styles; no need to fine.

Handling & storage

Rehydration
Dry-pitch preferred (no performance difference vs rehydration). Loses activity quickly after air exposure.
Storage
Below 4°C, vacuum-sealed; re-seal opened packs and use within 3 days.
Shelf life
To the expiry date if kept sealed and cold; don't use packs that have lost vacuum.
