About
An exceptionally attenuative top-fermenting French saison yeast that creates distinctive farmhouse beers with spicy, fruity and peppery notes. The spec sheet lists high fermentation temperatures, but in practice it performs well started around 20°C with a gradual free-rise, reaching target attenuation and a very dry finish without needing the extreme upper temperatures.

Brewing tips
- Fast starter — active within ~12 hours at 20°C, quicker than most saison strains.
- Despite a spec of 26–32°C it attenuates fully from a 20°C start with a free temperature rise.
- Mild, characterful phenolics: the peppery note is a feature, not a flaw.
- Works as a base for mixed-culture saisons, with a wild addition at secondary.
