About
Supernova is a roasted Gladfield malt — Canterbury winter barley taken through germination and then roasted to develop nutty, toasted-caramel flavour and colour. It works as a replacement for traditional crystal malts, giving similar depth but with less residual sweetness, which makes it unusually versatile: brewers use 5–10% in pale ales for toasty caramel that won't bury the hops, up to 25% in amber ales, and 10–15% in porters for complexity.
