About This Beer
Summer Haze V3 is the third in Owen’s summer ale series — a style he describes as sitting in the Witbier / Hazy Saison space. The grain bill is consistent across the series: Pilsner, Wheat, Vienna, and a small Light Crystal addition. What changes is the yeast and the adjunct quantities.
This version uses LalBrew Belle Saison — a Belgian farmhouse strain that brings a characteristic spicy, fruity ester profile. Cascade hops are used simply: 60-minute bittering, a 20-minute addition, and a small Day 5 dry hop to add aroma without bitterness. The ginger (10g) and honey (500g) at 15 minutes drive the summer character.
The mash runs for 90 minutes rather than 60 — appropriate for a high-wheat grain bill where full gelatinisation and conversion benefit from extra time. 22 litres bottled with 133g dextrose on 4 October 2022. Clean mouthfeel with a subtle honey and ginger aftertaste.
