About
Weyermann Special W is a dark specialty malt occupying the space between crystal and roasted malts. It delivers rich dark caramel, burnt sugar and dried-fruit character (raisin, plum) with deep ruby-to-brown colour, but it is not a roasted malt — it brings sweetness and dried fruit rather than bitter roast. Used in small percentages it adds complex dark-sugar depth to strong ales, Belgian ales, doppelbocks and amber styles.

Usage
No diastatic power; mash with a base malt. Use in small amounts — typically 1–5% — as its dark-fruit character is concentrated. Excellent alongside dark candi sugar in Belgian dark ales; avoid in pale styles where dried fruit is unwanted.
