About This Beer
An early iteration of Owen’s Red IPA series, and the first built with all Gladfield malt substitutions — the original Home Brew West kit was brewed as batch 6 in November 2020. This was also the first batch where ingredients were sourced from somewhere other than Home Brew West directly: Hauraki Homebrew in Albany supplied the grain bill this time.
Predecessor to the September 2021 iteration and the published Generation 5 brewed February 2022.
Grain Bill
7.09 kg total. The notebook records the Home Brew West originals in parentheses alongside each Gladfield substitution:
- 4.6 kg Gladfield Ale Malt (= Pale Malt)
- 1.2 kg Gladfield Aurora Malt (= Melanoidin)
- 0.55 kg Gladfield Light Crystal (= Caramalt)
- 0.44 kg Gladfield Medium Crystal (= Crystal Pale)
- 0.24 kg Gladfield Dark Crystal
- 0.06 kg Weyermann Special W
The Aurora-replacing-Melanoidin substitution is the defining choice that carries forward through all later generations.
Special W open question: the recipe sheet lists Weyermann Special W at 0.06 kg, but the next batch (September 2021) explicitly annotates Special W as “extra over R-IPA 7/6/21” — strongly suggesting Special W was not actually added on this June brew day despite appearing on the sheet.
Hop Schedule
- 25 g Pacific Jade at 60 min — bittering
- 15 g Mosaic Cryo at 10 min
- 35 g Mosaic Cryo at flameout
- 50 g Mosaic Cryo dry hop on day 7 from pitch
Mosaic Cryo carries all the flavour and aroma — a single varietal across 10-min, flameout, and dry hop. Pacific Jade is the bittering hop only on this brew; later generations bring it into the dry hop and whirlpool as well.
Fermentation
2 packets of Mangrove Jacks M44 US West Coast pitched at 19 °C. Dry hop 50 g Mosaic Cryo on day 7 from pitch.
M44 at 19 °C over-attenuated — FG hit 1.011 against a 1.020 target. Consistent behaviour for the strain at this temperature.
90-minute boil — uncommon and inherited from the original Home Brew West process; later generations move to a 60-minute boil. 3 L water added during the boil to compensate for evaporation.
Packaging
Bottled 22.25 L. Cost approximately NZD $68–70 ($3.09/L).
Numbers
| Stage | Target | Actual |
|---|---|---|
| Mash + sparge | 33.5 L | 33.5 L |
| Pre-boil | 30 L | 28 L |
| Boil additions | — | 3 L |
| Post-boil | 27 L | 26.5 L |
| Into fermenter | 25 L | 24 L |
| Bottle | 22 L | 22.25 L |
| Target | Actual | |
|---|---|---|
| OG | 1.07 | 1.062 |
| FG | 1.02 | 1.011 |
| ABV | 6.0% | 6.69% |
OG fell 8 points short — pre-boil under-shoot is the most likely cause. FG over-attenuated by 9 points. ABV finished at 6.69 % vs 6.0 % target — drier and stronger than planned, but well within Red IPA range.
Lineage
The series begins with the original Home Brew West kit (November 2020) and continues from this first all-Gladfield version:
- Red IPA — September 2021 — adds Pacific Jade dry hop, switches to BRY-97 yeast, confirms Special W in the grist
- Red IPA Gen 5 — February 2022 — adds Pacific Jade whirlpool, substitutes Gladfield Shepherds Delight for Special W, switches yeast back to M44
