A traditional Scottish spring barley variety used as a base malt for Scottish ales and whisky. It is sweeter and lighter than Maris Otter, less biscuity and more delicate, often described as faintly honey-like. Widely grown in Scotland from the 1960s before being displaced by higher-yielding varieties, it has been revived by specialty maltsters for craft brewers, and suits lighter, hop-forward beers where you want complexity without malt dominance.

Usage
