About

Shepherds Delight is a concentrated, more intense relative of Gladfield's Aurora Malt, giving a potent bready, toasted, cola-like flavour with lingering fruity sweetness and a deep red hue — reminiscent of decoction character. It is powerful, so it must be used sparingly; too much can push the beer toward bitterness. Beers built with it benefit from a few weeks' ageing to let the flavour mellow.

Usage

No diastatic power; mash with a base malt. Use sparingly — up to ~10% — as its malt flavour is intense. Gladfield recommend pairing it with Vienna malt for balancing sweetness, and allowing the finished beer a few weeks to mellow. Suits red ales, dubbels, amber ales and porters.
