New Zealand specialty crystal malt from Gladfield. Contributes rich caramel, toffee, and subtle red fruit character with a warm amber-red colour. Suitable for amber ales, red ales, and complex dark styles.

About
RedBack is a unique Gladfield malt prepared by a special process before being roasted until Maillard reactions occur. It yields a bright, clear wort with a lovely red hue, plus malty dried-fruit and toasted flavours — and, thanks to its lower modification and saccharification in the roaster, it also lifts body and head retention. Unlike some red malts it adds colour without the opalescence (haze) that can otherwise result.

Usage
No diastatic power; mash with a base malt. Use up to ~15% to add red colour, dried-fruit and toasted malt depth plus body and head retention. Complements a range of base malts and pairs well with Aurora for red, malty beers.
