About

Aurora is Gladfield's aromatic 'honey and melanoidin' malt, developed for rich bready, fruit-cake aromas and an orange-red colour. A long traditional germination and carefully controlled kilning drive a Maillard reaction between complex sugars and amino acids that creates its colour, flavour and aroma. It is the malt for big, malty, robust beers, and — unusually for such an aromatic malt — it retains enough diastatic power to be used up to 100%.

Usage

Usable up to 100% for an intensely malty beer, or in smaller proportions for colour and fruit-cake depth. Crystal malt amplifies its sweetness and bready aromas, while RedBack and Shepherds Delight bring out its red hues. Classic in dark ales, Belgian styles and high-gravity beers.
