Pre-gelatinised flaked corn (maize). Highly fermentable, it lightens body and colour while adding a clean, faintly sweet corn note — the traditional adjunct of American lagers, and increasingly used in craft brewing to thin the body without lowering alcohol. Being pre-gelatinised it goes straight into the mash without a cereal cooker.

Usage

Add directly to the mash with a diastatic base malt. Typical 10–30% for classic adjunct-lager character; smaller additions simply lighten body. High rates thin the body markedly, so balance against the base malt.
