Sitting in the medium-light crystal range of the Briess line, Caramel 40L is produced by the same wet starch-conversion kilning as the 20L but taken further, giving deeper caramel and toffee with light raisin and stone-fruit hints and a copper-to-amber colour. It is the classic American Pale Ale crystal — used alone for a direct copper-and-caramel profile or paired with Caramel 20L for a layered caramel character.

Usage
Steeped or mashed with a base malt; no diastatic power. Typical 3–15% of grist, up to ~20% before sweetness turns cloying. Pairs with American base malts and citrus, pine or tropical hops; commonly combined with Caramel 20L.
