The light end of Briess's American crystal range, kilned with a wet starch-conversion step that locks pre-converted sugars in a glassy endosperm. It gives golden colour and a clean, mild caramel sweetness without the raisin or burnt-sugar notes of darker crystals. A staple of American Pale Ales and light amber ales where a gentle sweetness and slight colour lift are wanted without overshadowing the hops.

Usage
Steeped or mashed; no diastatic power, so use with a base malt. Typical 3–15% of grist, up to ~20% before cloying in pale styles. Pairs with American base malts and citrus or resinous hops; often layered with Caramel 40L.
