Tasting notes

Smooth, rich porter-like mouthfeel with bold hop character. Nice malty/chocolate taste from the Dark Chocolate Malt. 340g hops across flameout and dry hop.

About This Beer

A winter favourite. The Black IPA walks the line between a porter’s rich, dark malt character and an IPA’s assertive hop profile — 340g of hops across flameout and dry hop additions give bold flavour without the bitterness of bittering additions at 60 minutes.

The grain bill puts Gladfield Ale Malt at over 83% with Dark Chocolate Malt providing colour and cocoa notes without excessive roastiness, Medium Crystal for body and sweetness, and Munich for depth. A step mash was used: protein rest at 50°C for 30 minutes, then saccharification at 68°C for 60 minutes, then mash out at 76°C.

Simcoe handles the 60-minute bittering; the flameout additions are a mix of Simcoe (80g), Riwaka (30g), and Mosaic (50g). Riwaka and Mosaic return for the dry hop, with an optional 40g Pacific Jade addition from leftover stock. M44 US West Coast fermented at 20°C for 14 days.

OG 1.060, FG 1.010, ABV 6.56%. 20 litres bottled with 130g dextrose on 13 April 2023.
