A traditional English winter barley variety bred in 1965 and considered by many the finest base malt for English ales. Lower in protein, fully modified and kilned slightly higher than standard pale malt, it gives a characteristic rich, biscuity, bready flavour that adds complexity even at 100%, and is the backbone of classic British brewing. Several UK maltsters produce it (Crisp, Simpson's, Fawcett), so spec varies slightly by maltster.

Usage
