New Zealand malted rye from Gladfield, produced from locally grown husklss rye corn. Adds spicy flavour, earthy character, and a clean dry mouthfeel. Start at 10%; can go up to 50% for strong rye character. Requires a finer mill setting than barley due to the absence of an outer husk.

About

Gladfield's Rye Malt is made from locally grown rye, malted and kilned with the same care as their barley malts and modifying beautifully in the kiln. Rye has no outer husk, so it benefits from a finer mill setting. It gives colour, spicy rye flavours and a clean, dry, silky mouthfeel, and being malted it converts in the mash unlike raw rye.

Usage

Start around 10% and increase up to ~50% for stronger rye character. Mill finer than barley (no husk), and consider oat or rice hulls to keep the lauter flowing, as rye can make the mash sticky. Classic in saisons, rye IPAs and farmhouse ales.
