It contributes fermentable extract while lightening body and drying the finish, with almost no flavour of its own — the defining adjunct of crisp light American and Japanese rice lagers. Pre-gelatinised, it converts in the mash on base-malt enzymes and needs no cereal cooking.

Usage
Add directly to the mash with a neutral diastatic base malt. Typical 10–30% for rice-lager character, or 5–15% for a subtle lightening and crisper finish. High rates thin the body, so balance with base malt.
